Cheesy Roasted Cauliflower Soup

Roasting the cauliflower gives this cheese soup great flavor.


1 Half Stick (1/4 cup) Butter with Olive Oil & Sea Salt

1 small (14 ounce) head cauliflower, cut into florets

1/2 teaspoon salt

1/2 teaspoon pepper

1 medium (1 cup) yellow onion, chopped

1 teaspoon finely chopped fresh garlic

2 tablespoons all-purpose flour

3 cups Half & Half

1 (14-ounce) can chicken broth

1/4 teaspoon ground red pepper

16 (3/4-ounce) slices Sharp Cheddar American Blend, chopped

4 slices thick-cut bacon, cooked, crumbled

2 tablespoons chopped chives, if desired
