Chicken & Rice Casserole

Ingredients

1 Half Stick (1/4 cup) Butter with Olive Oil & Sea Salt

3 small (1 cup) shallots, chopped

1 small (1 cup) leek, chopped

1 medium (1/2 cup) carrots, chopped

1/2 teaspoon salt

1 rib (1/2 cup) celery, chopped

1/2 teaspoon pepper

3 tablespoons all-purpose flour

1 cup chicken broth

2 cups cooked, chopped chicken

2 cups whole milk

1 cup cooked wild rice

1 cup cooked white rice

1 teaspoon chopped fresh oregano

4 ounces (1 cup)  Sharp Cheddar American Blend, chopped

 

1/2 cups crushed buttery round crackers

2 tablespoons Butter with Olive Oil & Sea Salt, melted
