Wild Rice Waldorf Salad

Lemon and pepper perfectly complements apples, cherries and wild rice in this new take on Waldorf salad.

Ingredients

CHICKEN

1 tablespoon Butter

8 ounces boneless skinless chicken breasts, cut into bite-sized pieces

2 teaspoons freshly grated lemon zest

1/4 teaspoon cracked black pepper

DRESSING

3 tablespoons vegetable oil

1 tablespoon sugar

1 tablespoons apple cider vinegar

1/4 teaspoon salt

SALAD

10 ounces (2 cups) cooked wild rice

1/4 cup dried tart cherries

1 medium (1 cup) sweet apple, chopped

2 tablespoons chopped green onion
