The crispy coating on tender zucchini makes these the perfect side dish for summer meals.
1 teaspoon kosher salt
1/4 teaspoon paprika
1/8 teaspoon ground red pepper (cayenne)
1/4 cup all-purpose flour
2 medium zucchini, cut into 1/4-inch rounds
1 cup panko bread crumbs
How to make
- STEP 1
Heat oven to 400ºF.
- STEP 2
Combine spicy salt ingredients in bowl; mix well. Set aside.
- STEP 3
Place melted butter in bowl; set aside.
- STEP 4
Combine flour and zucchini slices in bowl; toss to coat. Shake off excess flour. Place zucchini slices into melted butter; toss to coat. Press into bread crumbs until covered. Place in single layer onto baking sheet.

Bake 15-20 minutes or until lightly browned and zucchini is tender. Sprinkle with spicy salt, as desired. Serve immediately or reheat 5 minutes at 400ºF.
